KITK: Apple-raspberry Crisp

So I managed to get my little guy to help me out with another baking project. This one is an old family favourite but I continue to get better at it and keep mixing things up to keep it interesting. The base of this classic Apple Crisp recipe can be changed to include whatever fruit you would like – from apples to peaches and pears and even berrries added in there too!

This time around, we added lots of delicious raspberries to the apples on the bottom. Avery did a great job of arranging all the fruit on the bottom of the dish so that each serving would get a little bit of both fruits. :)

Here is the recipe, passed down to me by my uber-baker grandmother, now in her nineties! I can’t promise anything about low-fat or give you the calorie count or anything, but I can promise you that when made right, it is delicious!

Dee-Dee’s Apple Crisp:

Ingredients:
- 1/2 cup butter / marg.
- 1/2 to 1 cup brown sugar (how sweet do you like it?)
- 3/4 cup w. flour (add 1 tsp cinnamon)

Directions:
- Cover bottom of a 10″ pan with slice apples (you can add 1/4 cup of apple juice over apples)
- Cream butter, add sugar
- Gradually, mix in flour and rub to a crumbly mix
- you can add 1/2 cup rolled oat if you wish
- Spread crumbs over top of fruit
- Bake at 325 – when brown on top & apples are soft, take out of oven (maybe 25 mins or 30 mins, depends on oven)

I usually do add the rolled oats because it makes a better “cover”. If you have too little on top, the apples and fruit underneath don’t get all sealed in. Also using real butter will of course help the taste as well as the texture. For this size pan, use at least a few apples (more if they are small and less if you are adding other larger fruits).

Our combination of apples and raspberries turned out amazing!! The whole thing is already all eaten up (or I assume so anyways since I sent both kids with a little serving of it for dessert in their lunch bags today!). I will definitely bake it again (if you do too, I’d love to hear about it!). Next time I’d actually like to try peaches and raspberries! Hopefully I can convince a helper or two to work on that project with me. :)

Bold Brights Thank-You Cards & Stampin’ Up Changes

Continuing on with all the Thank-You cards I have been churning out lately as I enjoy using the “Kind Thanks” stamp set…

The patterned paper is a glittery-topped one so it did not need much further embellishment. Just added a little rhinestone on the tag and ribbon as well. The tag is popped out with dimensional adhesives. The bottom stamped image is a roller set from SU. On the inside, just a simple patterned paper in dark pink with light pink dots that coordinates well with the Pixie Pink paper where you can write a message of thanks.

This set actually made use of some of the last little scraps I have of Pink Passion and Pixie Pink paper! (((cry))) I haven’t been able to order another pack due to Stampin’ Up’s decision to retire these colours, as well as most of the colours in the Bold Brights “family”! So I’m just enjoying using these coordinating colours and my ink stamps as long as I can (I have both pinks as well as Tempting Turquoise and Green Galore). So sad about the retiring ones but glad that at least Tempting Turquoise is staying in the mix.

If you haven’t heard of SU’s “Colour Renovation”, here are the details!!!

* They are retiring quite a few of their standard colours, and bringing in some new colours as well as some past favourite “In Colours” to be their new standard colours.
* The 4 categories of colours will be Brights, Subtles, Regals, and Neutrals (this last category is new as a full collection set on it’s own, as opposed to previously when neutral papers were available as a separate set which wasn’t part of the Colour Collections).
* They also have a “Getting Started” collection which combines colours across those 4 sets.
* Despite these changes, they are still bringing in a set of “In Colours” for 2010-2011.

Avery’s School Album : Kindergarten Layouts

This blog post was written for (and first published on), the blog Ideas for Scrapbookers. I was super thrilled to be one of their Friday Featured Artists! I hope your find some scrapbooking ideas in this 1-page layout created for my son’s kindergarten section of his school album….

I think part of the reason I’m dawdling on my son’s school album layouts is that since he’s my “baby”, once I am done all of his Kindergarten layouts, I’ll never be able to do those kindy layouts again! There are certain stickers and embellishments that really don’t apply so well in those later school years, so I think the last layout in his Kindergarten years section will be an entire montage of classroom-themed items from crayons to counting aids!

At least I did finally get started on his first layout of Senior Kindergarten (also known as “kindergarten 5″)… I continued to keep some of the colours and themes consistent with the rest of the album (bright colours, white rub-ons, geometric shapes, buttons, and contrast), while still giving the new layouts their own look.

This layout, for the First Day of Senior Kindergarten, starts out with a great background that has squiggly lines in primary colours. On the left side, two matted 4×6″ photos (one cropped a little to show more of the frame), with an embellishment of a scalloped circle with layers on top – a paper-pierced orange circle that’s “popped” out with dimensional adhesives, and a green inner circle with a white rub-on star. I wanted to keep the picture of my son and the bus un-cropped because it really shows the size difference!! He is still so teeny tiny compared to that big huge bus, even with his special hat to make him a bit taller (that was the school’s way of identifying which kindergarten class each child was in, based on colour). The journaling block in the bottom left corner has white rub-ons for “First Day” and the numbers in the blue circle, and a black rub-on letters for “SK”. The journaling is in white gel pen. The tiny green button is a cute little accent. In the right corner we have the third matted 4×6″ photo – you can barely make out my son’s little face in the 2nd window.
